Nana's Famous Meatloaf

This allergy-friendly main dish is full of flavor and uses simple, healthy ingredients.


Finding delicious allergy-friendly meals is a challenge. My daughter, Lauren, isn't a big fan of protein, so anything that I can mask in a main dish is a plus. Before Lauren got sick, she loved Nana's famous meatloaf. So, one of the first things I did was try to replicate it using allergy-friendly ingredients.



Our family loves this recipe. We don't miss any of the original ingredients! It is simple to make, and it turns out delicious every time. We will often make multiple loaves at a time and then freeze them. They thaw out beautifully and keep their rich taste and moisture.


Nana's Famous Meatloaf

Makes 1 loaf


Ingredients:

1 pound of ground beef (we try to use organic when we can)

1 1/4 tsp of sea salt

1/4 tsp black pepper

1/2 tsp yellow mustard

1 egg slightly beaten

4 ounces spaghetti sauce (we love Rao's sensitive marinara sauce because it doesn't contain garlic or onion which are high FODMAP foods)

4 ounces of canned petite tomatoes

1 cup old-fashioned gluten-free oats

1 tsp of chives


Topping:

5 tbsp of ketchup (we use the organic ketchup from Target which has simple ingredients)

1 tbsp brown sugar

1/2 tsp yellow mustard


Directions:

Mix all ingredients except the topping together. Shape loaf on a foil-lined cooking sheet sprayed with olive oil spray. Mix topping ingredients and spread over top of loaf. Bake at 350 degrees Fahrenheit for one hour.
